Easy Elderberry Lollipops
A simple homemade lollipop with a comforting blend of natural flavours.
INGREDIENTS
- ½ cup elderberry syrup
- ¼ cup honey
- 1 tbsp orange zest
- ½ thumb-sized piece ginger, grated (optional)
- 1 tsp ground cinnamon (optional)
INSTRUCTIONS
- Prepare lollipop molds and insert sticks halfway through each mold. Set aside.
- In a small pot, combine elderberry syrup and honey and gently stir to combine.
- Place the pot on the stove with a candy thermometer clipped to the pot. Set to medium-low heat and stir often.
- Once the mixture reaches the hard-crack stage at 300°F, carefully ladle it into the molds.
- Transfer molds to the refrigerator and let them set for about 1 hour before removing from the lollipops.
TIPS & VARIATIONS
- Try making your own homemade elderberry syrup.
- No lollipop mold? Simply fill a shallow dish with cornstarch, smooth the surface, and press a small object into it to create mold shapes. Pour in the melted mixture carefully and let it cool until firm before removing.
