Peanut Butter Cups

A healthier homemade version of the classic peanut butter cup - sweet, creamy, and naturally satisfying.

For Chocolate layers:

  • 1 cup chocolate chips of your choice
  • 1 tbsp coconut oil

For Peanut Butter filling:

  • ½ cup natural peanut butter
  • ⅓ cup honey or maple syrup
  • 2 tbsp melted coconut oil
  • pinch of salt (if peanut butter is unsalted)
INSTRUCTIONS
  1. Line a muffin tin with 12 paper or silicone liners.
  2. Melt chocolate chips and 1 tbsp coconut oil in a double boiler until smooth.
  3. Spoon a layer of chocolate into each liner and freeze for 5 minutes to set.
  4. In another bowl, combine peanut butter, honey (or maple syrup), 2 tbsp melted coconut oil, and salt if using.
  5. Using the double boiler, gently warm the mixture until pourable, stirring to combine.
  6. Remove cups from freezer and pour peanut butter mixture evenly over each cup. Freeze for another 5 minutes.
  7. Pour the remaining melted chocolate over each cup to cover. Sprinkle with flaked sea salt if desired.
  8. Freeze for another 30 minutes, or until fully set.
  9. Store in the refrigerator for 5-7 days, or in the freezer for up to 2 months.
TIPS & VARIATIONS
  • Since these peanut butter cups are made with coconut oil, they should be stored in the refrigerator or freezer to prevent melting. If frozen, let them sit at room temperature for about 5 minutes before serving.
